After hosting a successful kickstarter campaign in May, Umai Dry, a company that manufacturers products that enables consumers to make dry-aged steak and dry cured meats at home, is bringing three new products to the wholesale market targeted towards gourmet retailers.

Recognized for having a rich taste and buttery texture, dry aging meats has traditionally been a costly and time-consuming endeavor. Umai Dry is designed to simplify the process by introducing a new material that is said to form a bond with the proteins on the surface of the meat, allowing moisture release and oxygen exchange while blocking odors and contamination. The Umai Dry bags are said to help home cooks craft dry-aged steak, charcuterie or slow-fermented dry sausage in a well-ventilated cooler or refrigerator in four to six weeks without risk of spoilage.

For retailers, the product is said to compliment assortments that include and/or offer demonstrations for Sous Vide, smoking or grilling products, and caters to customers looking to craft artisanal meats.

“Like wines or cheeses, meats get better with age,” Thea Lopatka, co-founder, Umai Dry told GOURMET INSIDER. “Consumers who appreciate quality meats and want to create the best possible flavors themselves are our target audience.”

Umai Dry will be releasing three products to the retail market. An Artisan Meat Kit has a suggested retail price of $170 and includes a complete system to make it possible to safely and reliably create authentic dry-aged steak and Artisan charcuterie like Coppa/Capicola, Pancetta, Prosciutto, Bresaola and more in a regular home fridge, the company said. It includes the Umai Dry Vacuum Sealer, Umai Dry and VacMouse Adapter and Packets, instructions for sealing and aging, juniper berries, an instacure packet, and instructions for dry aging charcuterie and recipes. At $28, the company is also debuting a dry-aged steak set that includes complete instructions for dry aging steak cuts, and the Umai Dry Artisan Meat Pack that can be used with any manual foodsaver or the Umai Dry Vacuum Sealer.

For $30, the Artisan Charcuterie Meat Pack includes instructions and recipes for creating dry cured charcuterie, and the Umai Dry Artisan Meat Pack that can also be used with any manual foodsaver or the Umai Dry Vacuum Sealer.
